Low Country Seafood Casserole

Ingredients

  • 3 pounds fresh seafood (shrimp, scallops, oysters, clams)
  • 1 cup mayonnaise
  • 1 cup cooked rice
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup chopped red pepper
  • White pepper (to taste)
  • 1 cup sliced mushrooms
  • 1 cup chopped celery
  • 1/2 cup chopped Vidalia onion
  • 3/4 cup cream
  • 1 can cream of mushroom soup

Directions

  1. Cook the seafood in boiling water.
  2. Saut peppers, onions, celery, and mushrooms together in butter or oil until tender.
  3. Toss all ingredients together and put in buttered baking dish.
  4. Cook at 375 degrees, uncovered for 30-40 minutes or until heated through.
