Rinse the outside of the turkey and the inside cavity well to prepare for seasoning. Refer to Fig. 4 & 5.

Now, this the last step before actually seasoning the turkey with the seasoning rub. What my Dad is doing here {Fig. 6, 7 & 8} is separating/raising the skin away from the actual meat of the turkey. You want to do this so that you can get the seasoning between the skin and the meat and lock in the flavor.
