			<content:encoded><![CDATA[<p>Deep frying your turkey should be a rewarding and satisfying experience provided that you follow a few safety rules. Follow the tips below provided by the <a href="http://www.bestsoulfoodrecipes.com/recommends/Underwriters_Laboratories_Inc_s_UL_/117/1">Underwriters Laboratories Inc.&#8217;s (UL)</a> safety experts and you should be fine.</p>
<ul>
<li>Turkey fryers should always be used outdoors a safe distance from buildings and any other material that can burn.</li>
<li>Never use turkey fryers on wooden decks or in garages. Make sure the fryers are used on a flat surface to reduce accidental tipping.</li>
<li>Never leave the fryer unattended. Most units do not have thermostat controls. If you don&#8217;t watch the fryer carefully, the oil will continue to heat until it catches fire.</li>
<li>Never let children or pets near the fryer when in use. Even after use, never allow children or pets near the turkey fryer. The oil inside the cooking pot can remain dangerously hot, hours after use.</li>
<li>To avoid oil spillover, do not overfill the fryer. If the cooking pot is overfilled with oil, the oil may spill out of the unit when the turkey is placed into the cooking pot. Oil may hit the burner/flames causing a fire to engulf the entire unit.</li>
<li>Use well-insulated potholders or oven mitts when touching pot or lid handles. The sides of the cooking pot, lid and pot handles get extremely hot. If possible, wear safety goggles to protect your eyes from oil splatter.</li>
<li>Make sure the turkey is completely thawed and be careful with marinades. Oil and water don&#8217;t mix, and water causes oil to spill over, causing a fire or even an explosion hazard.</li>
<li>The National Turkey Federation recommends refrigerator thawing and to allow approximately 24 hours for every five pounds of bird thawed in the refrigerator. This should be no problem if you follow our tutorial, as we marinate our turkeys for 2 days for maximum flavor.</li>
<li>Keep an all-purpose fire extinguisher nearby. Never use water to extinguish a grease fire. Remember to use your best judgement when attempting to fight a fire. If the fire is manageable, use an all-purpose fire extinguisher. If the fire increases, immediately call 9-1-1 for help.</li>
<li>Even after use, never allow children or pets near the turkey fryer. The oil inside the cooking pots remains dangerously hot, hours after use.</li>

<p>You can pick up your turkey, peanut oil, and plastic bag from your favorite local supermaket. We recommend that you use peanut oil because it gives the turkey a better flavor and is less likely to burn or smoke at a high temperature. However, you can substitute any high temperature deep frying oil that has a high smoking point (450°F, preferably) &#8211; corn oil, safflower oil, even canola oil. For the bag, my Dad uses an ordinary new, unused 13 gallon kitchen bag.</p>

A decent starter kit will run you approximately $70-80 depending on the time of year, and the available stock. A good one may cost a couple of hundred dollars.</p>

			<content:encoded><![CDATA[<p>You just found that great recipe that you have been trying to find for over year. And now you&#8217;re dancing around your kitchen in glee!</p>
<p>That&#8217;s when you notice that it makes enough to feed a small army, but you only need to feed two.</p>
<p>Or perhaps, it only makes enough for two; and that&#8217;s just not going to cut it for your family of five.</p>
<p>You REALLY want to prepare that recipe for your family and/or friends. So what&#8217;s a cook to do?</p>
<p>Well, you&#8217;ll be happy to know that it&#8217;s a cinch to reduce a recipe or increase a recipe. And most of the time you only need to reduce the ingredients by half for less or double the ingredients for more.</p>
<p><strong>Reducing Recipes to make half a recipe&#8230;</strong></p>
<p>It&#8217;s pretty easy to reduce a recipe by half, you just use half of each ingredient. If the recipe calls for 2 tablespoons, you would use only 1 tablespoon.</p>
<p>It can get a little tricky with ingredients like eggs though. I mean, it seems kind of hard to come up with half of 1 egg, at first. But here&#8217;s the trick&#8230;</p>
<p>If the reduced recipe calls for less than 1 egg, beat one whole egg. Measure out what you need with a tablespoon to divide. You can use the egg that is left in scrambled eggs, sauces, or discard (but if you&#8217;re like me, you hate to waste food).</p>
<p>Remember, the size of your baking pans must be reduced also. The pans should measure about half the area of those for the whole recipe. Oven temperatures won&#8217;t change. However, approximate baking time will be the same or maybe slightly less if the proportions of the pan are different.</p>
<p><strong>Increasing Recipes to double a recipe&#8230;</strong></p>
<p>When doubling a recipe, you do just that &#8211; double it!</p>
<p>You&#8217;ll use exactly twice the amount of each ingredient. And you&#8217;ll need to add an extra minute of beating for cakes.</p>
<p>Remember, when doubling recipes, you only add the top numbers of the fraction. For example, 2/3 cup plus 2/3 cup equals 4/3 cup. If you&#8217;re good with numbers, then you can convert this to 1 and 1/3 cup.</p>
<p>However, if you&#8217;re terrified of fractions like a lot of people, simply use a 1/3 measuring cup and measure out your ingredients until you have filled your 1/3 measuring cup 4 times and added to the recipe.</p>
<p>You will need to use twice as many pans of the same size indicated for the original recipe or a pan double in area. The batter should be the same depth in the pans so that the same baking time and temperature may be used.</p>
